- When the meat is completely browned, drain off as much of the grease as possible
- Add water, flour, and all spices to the meat; if it seems too watery add a bit more flour, or if it seems too dry add a bit more water

- I should warn you this next part can be difficult: Holding your plate with paper towels in the hand you don't write with, place a corn tortilla into the warmed oil; the trick is to watch it bubble and just as soon as it floats too the top of the oil scoop it out with a fork or spoon and place on plate. Do this with every single tortilla. Never set plate down till all of them are done otherwise it can become chaotic or you may get burned
- Now you are ready to roll your enchiladas! Spray a very large pan or 2 13 x 9 inch pans with non stick oil spray; position your softened tortillas, the meat mix, the grated cheese and the Wolf brand chili all within easy access
- Start by laying a tortilla half up the side of the pan and the other half laying flat on the bottom of the pan; place about 1 t of the meat mix on the tortilla, then sprinkle about 1 t of the cheese on top of the meat mix
- Very carefully begin to roll the tortilla up into a tube shape, making sure the seam is at the bottom; do the same thing with all of the remaining tortillas
- When finished rolling spoon out the Wolf brand chili over the top of the enchiladas, then sprinkle remaining grated cheese over top of the chili covered enchiladas
- Place pan or pans in. the preheated oven and cook for 30 minutes or until cheese is completely melted and bubbly***may serve with lettuce, tomatoes, onions, sour cream, hot sauce, peppers, guacamole, etc
