- 1/2 tsp black pepper
- 2 cup shredded cheddar cheese (for topping)
- 1 1/2 cup cilantro leaves (for topping)
- 1 cup (about) apple cider or water to make mixture as liquid as you wish
- 1 can corn 15 oz., with liquid (optional)

- Amounts of vegetables are approximate. Use whatever you want to get this total amount.
- Saute onion w. 3 Tbsp oil until semi-transparent.
- Add diced carrots/zucchini/green pepper and saute until tender, about 7 min.
- Brown beef/turkey and add to veggies in large pot.
- Add canned ingredients.
- Add spices and sugar.
- Bring to boil and simmer for 30-40 min.
- Top with shredded cheddar and cilantro.
- Makes 8-10 servings.
